Well, how about adding some succulent Tzatziki Chicken Skewers to the mix? These little beauties will take your vanlife culinary adventures to new heights, let’s get into it!
What Makes Tzatziki Chicken Skewers So Special
There’s something magical about food cooked over an open fire. The smoky aroma, the sizzle, and the whole outdoor experience is unbeatable. But when you add Tzatziki Chicken Skewers to the equation, oh boy, you’re in for a treat! The tender chicken, laced with a tangy marinade and slathered with cooling, creamy tzatziki… it’s a symphony of flavours that’ll make your taste buds do a happy dance.
The Role of Tzatziki
Let’s chat about tzatziki for a second. It’s a traditional Greek sauce made from yogurt, cucumber, garlic, and herbs, and it’s the soul of our Tzatziki Chicken Skewers. The tangy creaminess of tzatziki is a match made in heaven with grilled chicken. And here’s a little secret from my kitchen – I always make a bit extra for dipping. It’s just that good!
Choosing the Right Chicken
The chicken you choose can make or break this dish. I love using boneless, skinless chicken thighs for this recipe. They’re juicy, full of flavour, and stand up well to the robust flavours of the marinade. Trust me, the first time I tried it with thighs instead of breast, it was a game-changer!
Ingredients You’ll Need
For this mouth-watering dish, you’ll need some basic ingredients. Boneless chicken thighs, Greek yogurt, cucumber, garlic, olive oil, fresh dill, lemon, and some spices. I love shopping at local farmers’ markets when I’m on the road – it’s a great way to support local businesses and often, the produce is top-notch!

Step-by-Step Guide to Making Tzatziki Chicken Skewers
Alright, enough chit-chat. Let’s get cooking!
Prepping the Chicken
Start by marinating the chicken. Mix some Greek yogurt, olive oil, garlic, and spices, and let the chicken soak up all that goodness. This isn’t just a quick dip, though. We’re talking a full-on spa treatment for the chicken – the longer it marinates, the more flavourful it’ll be.
Once marinated, thread the chicken onto skewers. If you’re using wooden skewers, remember to soak them first to prevent burning.
Making the Tzatziki Sauce
While the chicken is getting pampered, make your tzatziki. Combine Greek yogurt, shredded cucumber, minced garlic, dill, lemon juice, and a drizzle of olive oil. It’s a bit like making a smoothie, but with yogurt and cucumber instead of fruit. Easy peasy!
Grilling the Skewers
Now comes the fun part – grilling! Lay your skewers over medium heat and grill until the chicken is nicely charred and cooked through. And here’s a tip – resist the urge to move them around too much. You want to get those gorgeous grill marks!
Serving Suggestions
When your skewers are ready, serve them up with a hearty slather of tzatziki. And if you want to go all out, why not pair them with a fresh Greek salad or warm pita bread? It’s like having a little Mediterranean escape, right there in the great outdoors!
Tidying Up and Storage
In vanlife, cleaning up after a meal can be a bit of a challenge. But not to worry, this dish is pretty low maintenance. Just a few bowls to wash, and you’re done. If you have leftovers, wrap them up and pop them in your cooler. They make for a great next-day snack, cold right out of the fridge!
There you have it, folks! A simple, delicious Tzatziki Chicken Skewers recipe that’ll elevate your campfire cooking game. Whether you’re parked by a tranquil lake or deep in the woods, this dish brings a bit of Mediterranean flair to your vanlife adventures. So fire up that grill, get those skewers sizzling, and savour the delicious journey that awaits!

Ingredients
- 2 tablespoons olive oil
- 1 Lemon juiced
- 1 tablespoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon Salt
- 4 boneless skinless chicken thighs cut into 1” pieces
- 1 Zucchini sliced into 1/4” moons
- 1 red onion chopped
- 14 Cherry Tomatoes
- ½ cup Tzatziki store-bought or recipe as follows
- Tzatziki Sauce
- ½ cup Greek yogurt
- ¼ cucumber seeds removed & chopped fine
- 1 tablespoon chopped fresh mint
- 2 cloves garlic finely minced
- ¼ teaspoon Salt
Instructions
- Mix the olive oil, lemon juice, oregano, garlic powder, and 1/2 teaspoon salt together in a bowl. Add the chicken and toss to coat. Set aside for 30 minutes (up to 2 hours) to marinate, tossing occasionally.
- To make the tzatziki (can be made ahead):
- Remove excess moisture from the chopped cucumber by blotting with a towel. Place the cucumber, Greek yogurt, mint, garlic, and salt in a small bowl and mix to combine.
- Cover & store in your cooler if making ahead of time.
- Prepare a grill or campfire for grilling.
- Thread the chicken and vegetables onto skewers.
- Once the grill is ready, place the skewers on the grill grate and grill, turning every few minutes so all sides cook evenly. The chicken will need to cook 3-5 minutes per side, and the veggies will need roughly 10-12 minutes.
- Remove skewers. Serve with tzatziki for dipping. Enjoy!
